On June 24th another amazing raw food class was held. But this class Shari's focus was Raw Indian Foods. For those wanting to try their hand at Indian food here are Shari's recipes. Have fun and enjoy all these great flavors!
Curried Cabbage
1 head green cabbage, chopped/1/3 c coconut shredded flaked/2tbs lemon juice/1/4 olive oil/1/4c braggs/3 tbsp sesame seeds/ 1/3tsp turmeric/1/2 tsp curry/1/2tsp cumin
Large bowl, and toss
Chop equal amounts- tomatoes, red onions, cucumbers, season with salt, cumin
3 c green cabbage, chopped, tomatoes, fresh grated coconut, 1 date, 2tbsp lemon juice, 2 tbs olive oil,
½ tsp brown mustard seed, ½ tsp ground cumin seed, ¼ turmeric, 1 tbsp minced jalapeno, braggs & sea salt
Chutney
1 c cherries, small handful raisins, 3tbsp chopped onion, 1 tsp honey, 1 tsp apple cider vinegar, 2 tsp braggs, 1 ½ garlic, 1 pinch ginger, 1 tbsp curry, dash of fennal , mustard seed, cardamom, garam masala, cinnamon
½ c brown rice, 1 tbsp curry, 1 lb carrots, ½ small beet, 1 stalk celery, Chinese spinach, 1 garlic, ½ small onion, olive oil, mung bean greens
Carrot-Coconut Soup
Carrots juiced, coconut juice – oil, fennel, dill, garlic, curry, red pepper,
Samosas and Chutney
1 c soaked walnuts, 1 head cauliflower, 1 yam, 1 onion, 1 zucchini, 1 lemon juiced, ½ c peas, 2 tbsp curry powder, 2 tsp sea salt, 2 cloves garlic, pinch cayenne, peppers if desired for hot!
Chutney- blend 2 cups sweat fruit – 1 c pitted dates, ½ tsp curry, pinch of dried lime, pinch of cayenne, braggs, 1 clove garlic, 1 tsp olive oil, and h20. For desired creaminess
Raw Pumpkin Curry
2 cups pumpkin seeds, ¼ cup onion, ½ cup yellow peppers, 1 cup ginger, 1 cup raisins, 2 tbsp coconut butter, ½ c shredded coconut or flour, 1 tbsp garam marsala paste or tbsp veg oil to blend the powder into paste, ¼ tsp cinnamon, 14 tsp sea salt, 1 tbsp fresh cilantro, ½ c frozen peas, kangen water
Soak raisins while prepping the pumpkin, onion and pepper, let frozen peas sit out, blend all ingredients in water except cilantro and peas, once all pureed add more water until reach desired consistency, warm the curry in dehydrator for half hour or straight from the blender
